A dry-laid wall holds by weight, friction, and how well each stone beds on the ones below it. Water passes through it, so nothing builds up behind. A mortared wall is a solid face, which looks tidy and takes a cap or a sill well, but it dams water, so it needs weeps and a proper drain behind it or it becomes a bathtub with a nice front. Dry-laid suits a garden bank. Mortared suits a formal front entry and a low seat wall.
